Lobster Pastitsada

For 4 persons:
- 1500 g of lobster
- 1 large onion
- 1 kilo fresh tomatoes
- salt
- 1 teaspoon red spicy pepper
- 1 teaspoon red pepper
- Β½ teaspoon black pepper
- olive oil
- 1 bay leaf
- pasta (macaroni)
Preparation
- Boil the lobster for 20 minutes in salted water (retain water). Then carefully place on a plate.
- Heat the olive oil in a deep casserole and saute the finely chopped onion until brown. Add the salt, pepper and bay leaf, then add the lobster whole, adding some water and boil for 1 hour.
- Caution: The water must be enough to boil the lobster and in the end not to be left in the casserole.
- In the reserved lobster water add 2 soup spoons of olive oil and boil the pasta. When cooked, rinse in cold water.
- Remove the lobster from the casserole and place on a platter, after having opened it with scissors. Mix the pasta with the sauce and serve in deep dishes without cheese.
