Soused Cod Bourdeto (salt-cured cod)

    For 8 persons:
  • 1 piece soused cod
  • 1 cup olive oil
  • 3 medium onions finely chopped
  • 2 mature unpeeled finely chopped tomatoes
  • 4 potatoes, each cut in 4 pieces
  • 1 teaspoon red spice pepper
  • 2 garlic cloves finely chopped
  • black pepper

Preparation


  1. Cut the cod into pieces and let it soak in cold water for 24 hours to remove the salt.
  2. Heat the olive oil in a big casserole on medium heat. Saute the red pepper for 2-3 minutes, then add the onions and garlic and saute for a further 2-3 minutes to brown. Add the tomato, potatoes and a cup of water. Cover the casserole and boil for 20 minutes.
  3. Spread the cod pieces over the potatoes and sprinkle with some black pepper. Cover again and let boil for 20-25 minutes until the sauce becomes thick.
  4. Serve hot.
