Soused Cod Bourdeto (salt-cured cod)

For 8 persons:
- 1 piece soused cod
- 1 cup olive oil
- 3 medium onions finely chopped
- 2 mature unpeeled finely chopped tomatoes
- 4 potatoes, each cut in 4 pieces
- 1 teaspoon red spice pepper
- 2 garlic cloves finely chopped
- black pepper
Preparation
- Cut the cod into pieces and let it soak in cold water for 24 hours to remove the salt.
- Heat the olive oil in a big casserole on medium heat. Saute the red pepper for 2-3 minutes, then add the onions and garlic and saute for a further 2-3 minutes to brown. Add the tomato, potatoes and a cup of water. Cover the casserole and boil for 20 minutes.
- Spread the cod pieces over the potatoes and sprinkle with some black pepper. Cover again and let boil for 20-25 minutes until the sauce becomes thick.
- Serve hot.
